Noodles were originally brought to Japan from China, but Japanese people loved them so much they integrated them into the Japanese diet, and noodle dishes such as ramen can now be called national dishes. The main types of noodles are ramen/egg, udon, somen and soba. Nowadays most of these can be found in large supermarkets, health stores and Asian speciality stores. On my website, you'll find a mix of dishes that can be thrown together quickly, such as the yakisoba with mixed vegetables, and dishes that require a little more time, such as ramen, which is going to be a real treat and definitely worth the effort. All of the recipes on this site are very versatile and the ingredients can be easily replaced as long as the broth or sauce in the recipe is used.
