Over the years I’ve presented cookery demos as resident cook on Virgin Media One numerous times. These have always been a really fun experience that allow me to share some of my favourite Japanese recipes with viewers at home.
In 2017, I joined Sunday AM presenters Laura Woods and Tommy Martin for a live cookery demo of my Japanese Beef & Potato Stew recipe, or ‘Nikujaga’ as it’s known as in Japan.
Tommy began the segment by remarking on the noticeable similarity between Irish stew and Nikujaga. In total agreement, I shared how I loved cooking this recipe when I lived in Japan as it reminded me a little of an Irish stew. The perfect cure for home sickness!
Thinly sliced beef is traditionally used for this recipe, but for the demo I used beef mince as I love the way it absorbs the sweet and savoury flavours of the sauce. It’s a light stew filled with umami and flavour.
