Curry Prawn Fried Rice

This Curry Prawn Fried Rice recipe is a quick, affordable and crowd pleasing Chinese-inspired dish. It uses up any leftover rice and vegetable you might have. Plus, our Fused Chinese Curry Stir Fry Sauce is mildly spiced so its kid-friendly too.

Ingredients

For the Prawn Fried Rice:

For the Fried Egg:

  • 2 eggs
  • oil for frying
  • salt & pepper to season

To Serve:

  • 1 spring onion sliced, to garnish

Instructions

For the Prawn Fried Rice:

  • Heat oil on a non stick wok/ frying pan on a medium-high heat.
  • Season the beaten egg with Fused Soy Sauce and add to the wok.
  • Fry until cooked and then remove from the wok.
  • Toss in the prawns and Fused Chopped Garlic. Fry until cooked through.
  • Add the grated carrot and chopped leftover vegetables. Mix well together.
  • Add the cooked rice & egg and mix together. Move the ingredients to one side of the wok making room for the curry sauce.
  • Pour Fused Chinese Curry Stir Fry Sauce directly onto the wok and heat for a minute or so.
  • Finally mix all the ingredients well together.

For the Fried Egg:

  • In a small nonstick pan over medium heat, melt the oil. Crack both eggs into the pan. Cook for 3 minutes, or until whites are completely set. Remove from pan and season with salt and pepper.

To Serve:

  • Divide prawn curry fried rice into two bowls. Top each bowl of rice with a fried egg and garnish with spring onion.
